I did a 30 day Vegan Challenge and this was my go to meal. This black bean chilli is delicious and packed with protein. Also I got to use of my favorite cooking device THE CROCK POT!! Crock pots are literally the best cooking invention ever. The best part about crock pot is that you can set and forget it LITERALLY!!! Before you go to work put all the ingredients in the crock pot then 4-8 hours later dinner is served by the time you get home. Amazing!
1cup black beanscan be from a can, I boiled them in water till soften which would be about an hour
1/2cupwateror vegetable stock
3 tbspcumin powder
saltseason to taste
pepperseason to taste
Add extra virgin oil, green onions, garlic and serrano peppers, tomatoes, water and black beans in crockpot
Next add all the seasonings : chillin powder, cumin, salt, pepper
After putting in all the ingredients in the crock pot get a big spoon and mix everything together, from the bottom up. So that every ingredient has some seasoning on it
Turn crock pot on high for about 4 hours ( or put on low for 8 hours)
What I LOVE about this chilli is that it will last for about week ( meal prep) and it goes with any thing. I can eat this by itself, with chips, in a taco etc ( in the picture I paired it with white rice). What is your favorite crock pot meal?
